What to serve with steak
From the super common to the more original, there are lots of different options when thinking about good sides for steak. Here are just some general ideas:
- potatoes (baked, mashed, grilled, or au gratin);
- salad (green, caesar, fruit, or otherwise);
- vegetables (roasted, sauteed, or grilled);
- rice (in plain, pilaf, or salad form); or
- bread (garlic bread, rolls, or cornbread).

Tips for grilling steak
While this post is all about what to serve with grilled steak, I’m including some tips to keep in mind for grilling the steak too.
It’s my husband’s favorite grilled protein and after grilling steak more often than I can count, I’ve learned some key tips to keep in mind.
- Bring the steak to room temperature before grilling. If you grill your steak straight out of the fridge your steak will likely cook unevenly, with the outside being done while the inside is still raw.
- Season your steak before putting it on the grill. You don’t need to be complicated with this – you can even just use salt. My favorite way to season a ribeye or NY strip steak is with this really easy homemade steak seasoning. For something smokier try this sweet and smoky steak dry rub. If you’re grilling a skirt or flank steak I love to use a marinade, like this balsamic steak marinade or this taco marinade for something Mexican-inspired.
- Make sure your grill is clean and oiled. If your grill has crusted food on it from the last time you grilled, it’s going to stick to the steak. So clean it up (how you do this will vary depending on what grill you have – check your manufacturer’s website) and then put just a little oil on a paper towel and grip it with a pair of tongs to oil the grill a bit. This will help the steak release off the grill grates more easily.
- Preheat your grill to a high heat. This varies a bit for the different cuts of steak, as flatter cuts like flank and definitely skirt steak don’t need as high a heat. But for thicker steaks like ribeye, NY strip, and filet mignon you want to start with a grill between 450-500F. This is going to sear the steak, though you only want to leave it on for 1 or max 2 minutes on either side to get the sear. Then immediately turn the heat lower (around 350F).
- Cook your steak to your desired temperature. You have to know how you like your steak – rare, medium, or well done – and what internal temperature that equates to. In order to do that you’ll need a meat thermometer (as well as know how to use a meat thermometer), and my guide on internal temperature for grilled meats.
- Rest your steak after taking it off the grill. Ideally you want to take your meat off the grill when it’s 3-5 degrees F away from hitting the internal temperature you want. Then let it rest for at least 5 minutes and up to 10 to help keep the juices inside the meat. To read more about resting steaks, see this article from Serious Eats.
