These Roasted Carrots with Honey Butter Glaze are so simple to make and taste amazing. Cooked on a pan in the oven then brushed with melted honey butter, they’re slightly sweet but still healthy. This recipe is perfect for special meals like Thanksgiving or as an easy addition to your weeknight dinner.
If you’re looking for an easy dish that goes with a holiday dinner or a weeknight meal, this is it. Keeping the carrots whole makes for less prep, and who doesn’t want that when cooking? Then when these come out, the honey butter glaze adds just the right amount of sweetness and truly makes these carrots out of this world. Your family will be raving about these, I promise.
I’m going to walk you through this simple recipe step by step, including some directions for food safety because I know that’s something that doesn’t always get thought about. I’m doing this as part of the Plate It Safe campaign by the Water Quality & Health Council to educate home cooks and bakers on how to safely prepare recipes.
How to Make Roasted Carrots with Honey Butter Glaze
The first step, and one that’s easy to forget – wash your hands! Use soap and warm water and wash for 20 seconds (as recommended by The Partnership for Food Safety Education).
You’ll also want to sanitize any kitchen surfaces you’ll be using (both before and after cooking the recipe). You can do this by making a solution of ¾ teaspoon bleach in 1 quart of water. Clean your surface of any debris first using soapy water, then rinse with clear water. Finally, apply the diluted bleach solution and let air dry.
How to Roast Carrots
Step 1: Prep the Carrots
Next you’ll want to preheat the oven to 400 degrees F. Take a sheet pan out and cover it with parchment paper (or a silicone mat). Set aside.
Clean the carrots by scrubbing them under running water with a clean vegetable brush, then use a large sharp knife and cutting board to cut the carrot tops and any small ends off.
Next take a vegetable peeler and peel the skin off the carrots. You can either do this on a cutting board or just over the garbage (which is what I usually do). Peel with a light touch to get a light layer of skin and not peel away too much of the carrot.
Put the carrots in a large bowl and drizzle the oil and kosher salt over the carrots. Mix them up (with your hand or utensil) until the carrots are well covered with oil and salt. Place them on the sheet pan lined with parchment paper and spread them out so they’re not touching.
Step 2: Cook the Carrots
Put the sheet pan in the oven and set the timer for 20 minutes.
Once the timer goes off, take the pan out of the oven and roll the carrots around a bit so they they brown evenly. Place the sheet pan back into the oven and set the timer for another 15 minutes. When the timer goes off again, take the pan out of the oven and rotate the carrots again. Put them back in the oven to cook for the last 10 minutes.
When the timer goes off, take the sheet pan out of the oven and turn the oven off. Insert a sharp knife into the carrots to make sure they’re done – if there’s no resistance, the carrots are cooked all the way through.
How to Glaze Carrots with Honey Butter
Step 3: Glaze the Carrots
Heat the honey butter in a small microwave-safe bowl in the microwave for 10 seconds (or until it’s melted). If you don’t have honey butter on hand, just combine ½ cup (or 1 stick) of butter with ⅓ cup of honey and ½ tsp of vanilla extract and whip until smooth. Brush the honey butter evenly onto the carrots with a pastry brush, then serve! Feel free to add a dash of freshly ground black pepper if you desire.
Now I know you’re going to ask this, so I’m answering it below.
Do You Peel Carrots Before Roasting?
You definitely don’t have to peel carrots before roasting. You just need to scrub the carrot well and follow the rest of the recipe as written. I like to do it because it gives the carrots a uniform look, but it’s not required.
Cooking Tips
- While it looks nice to keep about half an inch of the leafy part of the carrot on, you don’t have to. This recipe works just fine either way.
- Be sure to cut off any small tips of the carrot! If you leave them on, they’re likely to burn.
- Make sure and reach down to the bottom of the bowl with your hands when coasting the carrots with oil and kosher salt. Some of the oil and salt may pool there and you really want to cover your carrots well.
- Don’t forget to turn the carrots during cooking! If you don’t, they’ll end up blackened on one side.
Recipe Variations
- Use ghee in place of the butter in the honey butter to make this recipe paleo.
- Add a dash of chili pepper flakes on top of the roasted and glazed carrots to add just a bit of heat.
- Add a sprinkle of chopped fresh parsley or freshly cracked pepper over the roasted and glazed carrots to add a bit of extra flavor to this dish.
