This Dry Rubbed Flank Steak recipe is an easy and healthy weeknight dinner that’s great with a side of veggies or on a salad. The seasoning goes on as a rub, then add some oil and cook it on the grill. It’s grilled steak perfection!

Flank steak is a great cut of meat. It’s relatively inexpensive, can be cooked quickly, and can be flavored a bunch of different ways. While I normally like to flavor my steak with a gluten free tamari marinade, sometimes I don’t plan far enough ahead for the marinade to really do it’s work. That’s where this dry rub comes in.
I discovered a dry rub recipe from Epicurious but wanted to make some tweaks to make it more to my liking. And this rub is what I ended up with. It’s so delicious and so easy, you’re going to love it.
What Makes This Dry Rubbed Flank Steak So Great

Before we get into the recipe, let’s talk about flank steak a little.
Is Flank Steak Expensive?
Flank steak is a cheaper cut of steak than others. Skirt steak is typically slight cheaper, but flank steak is usually cheaper than cuts like ribeye, t-bone, and filet mignon.
Is Flank Steak Tough or Tender?
Flank steak is a tougher cut of meat. It has fibers running down that contributes to its toughness. On the opposite end is filet mignon, which is the most tender cut of beef.
How Long Does Flank Steak Need to Rest?
As a general rule, I typically let flank steak rest for roughly 10 minutes. You don’t want to cut into it right away as it will lose juices and flavor.
Now onto the recipe!
How to Make Dry Rubbed Flank Steak
First take your flank steak out of the fridge to warm slightly, then heat up the the grill to 425 degrees F.
Remove the flank steak from its packaging and dab it with a paper towel to remove any moisture. Lay it out on a cutting board and set aside. Next, measure out the spices with measuring spoons and combine them in a small bowl.
Sprinkle half of the rub on one side of the steak and spread it around with your hand to rub it in, then flip the steak over and sprinkle the second half of the rub onto the other side of the steak, again spreading it around with your hand to rub it in.
Measure out the oil with a measuring spoon and pour half of it onto one side of the steak and rub that in. Do the same on the other side. Be sure to wash your hands with soap after touching the raw meat!
Place the flank steak on the grill and cook for 5 minutes on one side. Then flip and cook for 6 minutes on the other side (for medium doneness).
Cook a minute or two less for medium rare or a minute or two more for well done.
While the steak is cooking, wash the large cutting board to be ready for after the flank steak is done.
Once the steak is done cooking, place it on the cutting board and let rest for 10 minutes. After it rests, cut it into slices using a large sharp knife. Cut it across the grain (perpendicular to the lines in the steak that run lengthwise). Serve immediately.
Cooking Tips
- Take your flank steak out of the fridge to warm slightly before you fire up the grill. If your steak is still too cold when you grill it, it will cook unevenly and be overly done on the outside and cold and raw on the inside.
- Be sure to wash your hands after touching raw meat! Raw meat can make you sick and you will contaminate any surface you tough before washing your hands.
- When cutting the steak, be sure and cut against the grain. Meaning, you want to cut perpendicular to the lines in the steak that run lengthwise. Since flank steak is a tough piece of meat, cutting against the grain will make it easier to eat.
Recipe Variations
- Try a different cut of steak! Skirt steak would work well, though is thinner so won’t need to cook as long.
- Spice up the steak by adding about ¼ tsp of cayenne pepper to the rub!
- You can either cut the steak into ¼ inch strips or shave it into very thin slices, whatever your preference is!

- ½ tbsp paprika
- 1 tsp kosher salt

- ½ tsp garlic powder
- ½ tsp mustard powder
- ¼ tsp ground coriander
- ¼ tsp ground cumin
- 1 tbsp high heat oil avocado or canola
Instructions
