This smoked skirt steak on the Traeger is so simple and so delicious. Soaked in an easy marinade, it gets smoked on the pellet grill then a reverse sear is done to finish it off. If you’re looking for something that makes you go “uh, YUM”, then you’ve found a match. Because that’s the exact sound I made after I bit into a slice of this skirt steak.
The great thing about skirt steak is it’s thin, so it doesn’t take long to marinate and it will absorb the flavor more quickly than other cuts, like a flank steak. That’s part of what makes this recipe great.
The other part of this recipe that works well for skirt steak is doing a reverse sear. By first smoking the steak slowly, it allows you to more easily monitor the temperature of the steak so it doesn’t overcook. Then you finish it off at a higher temp to sear the meat and give some extra flavor to it.
Ingredients
- Skirt steak – about one pound total
- Lime juice – fresh or bottled is fine here
- Coconut aminos – this provides a slight sweetness to the marinade
- Oil – any high heat oil works. I like to use avocado oil.
- Garlic – three large cloves, or more if you like a strong garlic flavor

- Spices – cumin, coriander, and chili powder.
Sides to pair with smoked skirt steak
Many dishes that pair well with a regular grilled steak will pair well with this smoked skirt steak! Here are some great options:
- Try some grilled veggies! My favorites are grilled zucchini, grilled onions, and grilled bell peppers.

Recipe tips
- Check your hopper or basket before you start smoking! I can’t tell you how disappointing it is to run out of wood in the middle of a smoke.
- I recommend using a smokier wood for this recipe, like a mesquite or hickory. I would stay away from the fruit woods like apple or cherry.
- When grilling meat, you always want to cook to internal temperature. I’ve listed an approximate cook time, but it will really vary depending on the weather. Be sure and either use a temperature probe or check the temperature often with a meat thermometer. Equipment
- A large measuring cup
- A large sealable plastic bag
Ingredients
- ¼ c fresh lime juice
- 1 tbsp oil avocado or canola
- 1 tbsp coconut aminos
- ½ tsp ground cumin
- 1 tsp kosher salt
- ¼ tsp ground coriander
- ½ tsp chili powder
- 3 cloves garlic
- 1 lb skirt steak
Instructions
- Combine everything but the steak in a mixing container (I like to use a large measuring cup). Stir it with a whisk until there are no more clumps of spices.
- Open a large sealable plastic bag or other container and place the steak in it. Pour the marinade over the steak and seal the bag, pressing as much air out of it as you can.
- Place the steak in the refrigerator and let marinate for at least 2 hours and up to 10 hours.
- Take the steak out of the fridge 20-30 minutes before putting it on the grill to come closer to room temperature. Set your Traeger (or other smoker) to 225 degrees F.
- When the Traeger comes to temperature, remove the skirt steak from the container with a pair of tongs and set it on the grill. Discard the leftover marinade.
- Smoke the meat until the internal temperature reaches around 115 degrees F, then use the tongs to remove it from the grill onto a cutting board. Turn the temperature of the Traeger up to 450 degrees F.
- When the Traeger is at temperature, place the steak back on the grates with the tongs, grilling for 2 to 3 minutes each side until the internal temperature reaches around 140 degrees F.
- Remove from the grill and let rest for 5 to 10 minutes on the cutting board before slicing into it with a large sharp knife. Serve immediately.
