I have been there and know that pain, especially since being gluten-free. But there are some really great vegetable side dishes you can make quickly (including these sauteed green beans), so don’t be discouraged!
As for this recipe – sauteed mushrooms and zucchini are so easy to make, which makes it a great beginner recipe. Each vegetable has a fairly mild taste, which means they’ll take on whatever taste you give them. This recipe uses simply fresh garlic, kosher salt, and black pepper – things that are fairly common in the kitchen.
One of the keys to this recipe is to cook the mushrooms first so the moisture is cooked out before adding in the zucchini. This helps keep the zucchini from getting mushy – because no one wants mushy zucchini.

- It’s a quick and easy side dish that takes less than 20 minutes to make.
- You can make it year-round as both main ingredients are in grocery stores throughout the year.
- It’s very easy to customize the taste – add more or less salt, omit the black pepper, or add some red pepper flakes!
Ingredients
- Sliced mushrooms – I like to get mine presliced, but you can also get whole mushrooms and slice them yourself.
- Zucchini – small- to medium-sized ones are best as they cook up better than the larger ones with softer centers.
- Garlic – I recommend using 2 cloves, but feel free to adjust depending on how much garlic you prefer.
- Oil – I used extra virgin olive oil in this recipe, but you can use any oil you have on hand.
- Spices – kosher salt (I use Diamond Crystal kosher salt) and ground black pepper.
