This recipe for curry mayo gives you a quick way to add a punch of flavor to some of your favorite dishes. Combining just three ingredients – mayo, curry powder, and lime juice – it seriously only takes 2 minutes to make. It’s great on burgers and sandwiches or can be used as a dipping sauce for fries, tots, or veggies. This is an easy homemade recipe that will give your next meal a fun and zesty twist.

I am not kidding when I say it takes 2 minutes to make. And it only has 3 ingredients. I’m honestly not sure it could get much simpler than that!
I love a good sauce with my grilled burger. While my default tends to be my homemade burger sauce (it’s so good), sometimes I’m in the mood for something different.
That’s where this Thai-inspired flavored mayo comes in.
I’ll slather it on a (gluten free) burger bun and then use any extra for dipping my fries into.
But don’t stop there – there are a bunch of ways you can use it!
What do you use curry mayo for?
This sounds cheesy as all get out, but basically however you want! If you need suggestions here are some to get you going:
- on a burger – a curry burger being one of my favorites to use curry mayo on;
- in a sandwich when you want a little extra spice;
- to make a curried chicken salad; or
- as a curry dip for fries (regular or sweet potato fries), tots, or even cut-up vegetables.
Grab these 3 ingredients!

- Mayonnaise: you can use whatever mayo you like. I used Primal Kitchen avocado oil mayonnaise in this recipe, which is a thick mayo. If your mayo is on the thin side you may want to add more of it or lessen the amount of lime juice used depending on how thick you want your curried mayonnaise to be.
- Curry powder: use your favorite curry powder here. I like to use a sweet curry powder to keep the heat level lower, but if you like a spicy mayo then use a spicier curry powder.
- Lime juice: you can use fresh or bottled lime juice, though the flavor will come through more with fresh lime juice.

This recipe could not be more simple. You just have to add the ingredients together and then stir to combine.
Storing homemade curry mayo
You can easily store this curry dip in an airtight container for up to 2 weeks in the fridge. A container like a small mason jar works well for this.
Be careful storing it in something like plasticware as the turmeric in the mayo could stain the plastic.

2-Minute Curry Mayo
Ingredients
- ½ cup mayo I used Primate Kitchen Avocado Oil Mayo
- 2 tsp curry powder
- 4 tsp lime juice fresh or bottled
Instructions
- Measure out the ingredients with measuring spoons and cups and add them to a medium-sized bowl.
- Whisk everything together until it is well combined – it will look lump at first but keep going until there are no clumps.
- Use immediately or store in the fridge in an airtight container for up to 2 weeks.
