2-Minute Curry Mayo

This recipe for curry mayo is a quick way to add a punch of flavor to some of your favorite dishes. Combining just three ingredients - mayo, curry powder, and lime juice - it seriously only takes 2 minutes to make. It's great on burgers and sandwiches or can be used as a dipping sauce for fries, tots, or veggies. This is an easy homemade recipe that will give your next meal a fun and zesty twist.

Ingredients

  • ½ cup mayo I used Primate Kitchen Avocado Oil Mayo
  • 2 tsp curry powder
  • 4 tsp lime juice fresh or bottled

Instructions

  • Measure out the ingredients with measuring spoons and cups and add them to a medium-sized bowl.
  • Whisk everything together until it is well combined - it will look lump at first but keep going until there are no clumps.
  • Use immediately or store in the fridge in an airtight container for up to 2 weeks.

Notes

  • I used Primal Kitchen avocado oil mayonnaise in this recipe, which is a thick mayo. If your mayo is on the thin side you may want to add more of it or lessen the amount of lime juice used depending on how thick you want your curried mayonnaise to be.
  • I like to use a sweet curry powder to keep the heat level lower, but if you like a spicy mayo then use a spicier curry powder.
  • You can use fresh or bottled lime juice, though the flavor will come through more with fresh lime juice.
