This Chicken Cobb Salad recipe is an easy and healthy dinner option that can be thrown together in under 30 minutes. Made with grilled chicken, tomatoes, avocado, bacon, and eggs, it’s got classic flavors but is gluten free, paleo, and Whole30 compliant.
Cobb salads are fantastic for leftovers and great to use up ingredients that need to be eaten soon. I love to use my grilled dijon chicken in a cobb salad because adds an extra bit of flavor.
To make this recipe, you’ll need the following ingredients for the base of the salad:
- cooked chicken
- cooked bacon (make sure it’s compliant if doing a Whole30!)
- hard boiled eggs
- cherry tomatoes
- avocado
- lettuce
Really it’s just a matter of combining all the ingredients with some salad dressing (see my recommendations below), but read on for a little more detailed instructions,
How to make a Chicken Cobb Salad
Step 1: Prep the ingredients
Using a cutting board and sharp knife, chop the lettuce into pieces, halve the tomatoes, slice (or dice) the avocados, and cut the hard boiled eggs into halves or quarters. Be sure and wash and dry your produce first!
*prep tip* cut the lettuce into medium to small pieces! You want to make sure they aren’t so big that they’re difficult to fit in your mouth. Same goes for the tomato – depending on the size of the cherry tomatoes cut them into quarters or halves.
Next prep the meat ingredients. Crumble the bacon with your hands or cut it up using the knife and cutting board. Cut the chicken thighs into roughly half inch slices with the knife as well.
Step 2: Assemble to salad
Place the chopped lettuce in the bottom of a large bowl and pile the other ingredients on top of the lettuce. Pour the dressing on top, or leave it undressed if people would like to pour it on themselves. Use salad tongs or other utensils to toss the salad and serve!

Really you can use any dressing you like, just make sure it’s compliant if you’re doing a Whole30! Personally I love to use a ranch dressing, like Primal Kitchen’s Ranch or Tessemae’s Avocado Ranch.
RECIPE VARIATIONS
- Switch up the meat! You can use whichever (Whole30 compliant) meat you have on hand. If you have leftover rotisserie chicken, great! Or if you’ve got some deli meat, use that!
- Add in more veggies! If there are veggies you want to use up – shredded carrots, sliced cucumbers, etc. – feel free to add them in. The more the merrier!
- Try poached eggs instead of hard boiled ones! I love a good poached egg, and it would be great in this salad.
