Taryn Solie: Hello grillers, and thank you for tuning in today! I am your host, Taryn Solie, and I am here to talk with you about all things grilling and outdoor cooking, including delicious recipes and handy tips and tricks, all to give you some grilling inspiration.
Today’s recipe is super easy – so easy I almost hesitate to call it a recipe. I’ll be going over how to make a curry mayo sauce.
This flavored mayo takes just two minutes to whip up – and yes, I seriously mean two minutes – and it has only three ingredients. But what’s great is it packs a lot of flavor in just a little bit of sauce, which can really make a difference for your meal.
I will say I came up with the sauce kind of on accident as I was recipe testing a curry burger – which was delicious – but I really wanted a sauce to go with it. So I threw some things together in a bowl and this curry mayo sauce was born.
When I say sauce, the texture of this is really more of a dip as it’s on the thicker side. But you could certainly thin it out to be saucier.
Okay, let’s go over the ingredients. To make this curry mayo you’ll need the following:
- ½ a cup of mayo,
- 2 teaspoons of curry powder, and
- 4 teaspoons of lime juice.
A couple of notes about the ingredients.
One, I use Primal Kitchen Avocado Oil Mayo in this recipe, which is a pretty thick mayo. If you’re using a thinner mayo I would start out with just 2 teaspoons of lime juice and then add more depending on how thick or thin you want your sauce.
Two, you can either use a sweet curry powder if you’d like a more mild flavor or a spicy curry powder if you want to turn up the heat. You can also cut the curry powder in half to start and then taste it to see if you’d like to add more.
And three, for the lime juice, you can use bottled or fresh. Fresh is going to give you more of a zing so that is absolutely my preference, but bottled will certainly work.
Now for the directions. And this is so easy it’s almost criminal.
Measure out each ingredient and add them to a medium sized bowl. Use a small whisk to stir everything together until it’s well combined – and I do recommend using a whisk as it will be the best thing to get all the small lumps out. The sauce will look lumpy for awhile, but eventually it will become smooth, you just have to keep stirring.
And really that’s it! Once it’s smooth you’re ready to serve it.
I’ve used this curry mayo sauce on a burger – both the curry burger I mentioned before as well as my paleo burger and my gluten free burger recipe. This sauce is both gluten free and can be paleo if you use a paleo mayo. I’ve also used it to dip fries and tots in, and you could even dip veggies in it. You could also use it on sandwiches or to make a curried chicken salad. There are lots of good ways to use it.
The last thing about this recipe is how to store it. You’ll want to put it in an air tight container and place it in the fridge. You can either use a mason jar with a lid or some other type of container. If you use something like a plastic tupperware container just know that the turmeric in the mayo may stain the container so be prepared for that. The sauce should keep for up to 2 weeks when stored that way.
