GLAZED CARROTS

These Roasted Carrots with Honey Butter Glaze are so simple to make and taste amazing. Cooked on a sheet pan in the oven then brushed with melted honey butter, they’re slightly sweet and totally delicious.

INGREDIENTS

– 1 lb whole carrots – 1 tbsp oil – 1 tsp kosher salt – 1 tbsp honey butter (can use regular butter)

Rinse the carrots under water to clean them, then use a large sharp knife and cutting board to cut the carrot tops and any small ends off.

Preheat your oven to 400 degrees F, then lightly peel the skins of each carrot off with a vegetable peeler.

Place the carrots in a bowl & drizzle the oil & kosher salt over the top. Mix with your hands to combine.

Place the carrots on a sheet pan lined with parchment paper & bake in the oven for 20 minutes.

Remove the carrots from the oven and roll them slightly so they brown evenly. Place back in the oven to cook for another 20 to 25 minutes, until easily pierced with a knife.

Heat the honey butter until melted, then brush onto the carrots. Serve immediately!

Can you make glazed carrots the day before?

Glazed carrots are best served the day of. You can prep them the day before, but it's best to cook & eat them the day they are cooked.
