Ground Pork Tacos (Paleo, Gluten Free)

These Ground Pork Tacos are an easy and healthy paleo dinner option that's quick to make for a weeknight. Topped with slaw and cooked with seasoning like paprika and chipotle, there's just a hint of smokiness. They're also Whole30 compliant when eaten as lettuce wraps!

Ingredients

  • 1 pound ground pork
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ tsp onion powder
  • ¼ tsp paprika
  • tsp chipotle powder
  • paleo/gluten free coleslaw
  • 8 paleo/gluten free tortillas
  • lime if desired
  • cilantro for garnish

Instructions

Items Needed:

  • One medium or large non-stick pan
  • A wooden spoon or spatula
  • Measuring spoons
  • A small bowl

Directions:

  • Make your coleslaw. If you bought something at the store, this step is done. If not, follow the steps for my Healthy Coleslaw Dressing and Healthy Apple & Broccoli Slaw that are both paleo and Whole30 compliant.
  • Start cooking the meat. Grab a medium or large non-stick pan and begin cooking the ground pork over medium heat, breaking it up with a wooden spoon or spatula as you go.
  • While the ground meat begins to cook, measure out the spices with a measuring spoon into a small bowl. Stir them together then sprinkle the blend over the pork, cooking it until the pork is no longer pink. Remove the pan from the heat when it's done.
  • Take your tortilla (gluten free, paleo, or a large leaf of lettuce if on a Whole30) and scoop some ground pork on it. Then pile the slaw on top and serve with a sprinkle of cilantro or a squeeze of fresh lime.

Notes

 - Use lettuce leaves or a compliant wrap if on a Whole30
