HAMBURGER SOUP

EASY

This hamburger soup recipe is perfect for family dinner. Made with ground beef, potatoes, & other veggies, it's the best warm and hearty comfort food. Plus it's Whole30 compatible!

Ingredients: 1 lb ground beef 1/2 large onion, diced 1 quart beef broth 2 large carrots 3/4 lbs Yukon Gold potatoes 14 oz canned diced tomatoes 1 tbsp tomato paste Spices (kosher salt, garlic powder, Italian seasoning, bay leaf) 3.5 oz shiitake mushrooms

Cook the ground beef in a large pot over medium heat. Add 1/2 tsp each of kosher salt and garlic powder. Cook until beef is browned then add diced onion.

Chop the carrots into coins and the potato into roughly 1 inch cubes. Set aside.

Add everything except the mushrooms to the pot, increase the heat to high & bring to a boil.

As soup is heating up, de-stem & chop mushrooms. Add them to the pot & bring back to a boil. Reduce heat to medium low & cook for 12-15 minutes.

Spoon soup into a bowl & serve with a garnish of chopped parsley, if desired.

HOW LONG IS HAMBURGER SOUP GOOD IN THE FRIDGE?

Hamburger soup will keep in an airtight container for 3-5 days in the fridge.
