PERFECT FOR WEEKNIGHTS!

This Steak Burrito Bowl recipe is better than Chipotle and so easy to make. Just grill up a lightly seasoned flank steak, then combine with your favorite toppings – rice, lettuce, salsa, whatever you like! Perfect for a weeknight dinner.

INGREDIENTS

4 slices cooked flank steak 1 cup cooked rice 1/4 cup canned black beans (rinsed & drained) 1/4 cup shredded cheese 1/2 cup shredded lettuce 1/4 cup pico de gallo 1 tbsp guacamole Chopped cilantro and sliced lime, for garnish

If you haven't already, cook the flank steak. Preheat a grill to 400F, season the steak generously with salt & pepper, & cook until the internal temp reaches 135F (for medium rare).

If needed, make the rice according the package directions. Set aside once done.

If not done already, prep the rest of the ingredients - chop the lettuce, drain & rinse the beans, make the guacamole, etc.

Start piling everything into a bowl, adding a wedge of lime if desired.

Top with some guacamole and a sprinkle of chopped cilantro and enjoy!
