SMOKED MEATLOAF

WITH HIDDEN VEGGIES!

Ingredients:  - Frozen Spinach  - Onion  - Ground Beef  - Almond Flour  - Kosher Salt  - Garlic Powder  - Italian Seasoning  - Coconut Aminos  - Egg  - Ketchup

Thaw & remove excess water from spinach, then place it in a processor or blender with chopped onion. Dice into pieces.

Combine all the ingredients in a large bowl until well mixed. Form the mixture into a 10-12 inch loaf on a piece of foil.

Heat your pellet grill or smoker to 225F & place the meatloaf inside. Put a meat probe in the loaf & set the temp to 160F.

After 2 hours (or when the internal temp is 145F), brush ketchup onto the meatloaf and finishing cooking until 160F.

Remove from the smoker & let cool for 10 minutes, then slice and serve!

HOW DO YOU KEEP MEATLOAF MOIST?

By adding in items that keep moisture, like the almond flour.
