MEATLOAF MUFFINS

WITH HIDDEN VEGGIES!

Ingredients:  - Frozen Spinach  - Onion  - Ground Beef  - Almond Flour  - Kosher Salt  - Garlic Powder  - Italian Seasoning  - Coconut Aminos  - Egg  - Ketchup

Thaw & remove excess water from spinach, then place it in a processor or blender with roughly chopped onion.

Combine all the ingredients in a large bowl until well mixed. Separate in 4 sections to make it easier to put in muffin tin.

Divide the portions into the muffin tin, topping with ketchup and baking in a 350F oven for 35-40 minutes.

HOW DO YOU KEEP MEATLOAF MOIST?

By adding in items that keep moisture, like the almond flour.
