These Flourless Almond Butter Cookies are the perfect healthy treat. Made with coconut sugar and a touch of cinnamon then topped with a chocolate drizzle, this easy recipe is sure to be a hit.

INGREDIENTS

– 3/4 cup coconut sugar – 1 cup almond butter – 1/2 tsp baking soda – 1 egg – 1/4 tsp ground cinnamon – 1.4 ounces chocolate (roughly half a large bar) – 1/2 tsp coconut oil – several pinches of large flaky salt, like fleur de sel

Preheat the oven to 350F & line a baking sheet with parchment paper. Combine the coconut sugar, almond butter, baking soda, egg, and cinnamon in a bowl & mix until smooth.

Divide the mixture into four sections in the bowl, then use a cookie scoop to scoop out 1.5 inch balls onto the baking sheet. Each section should be about 3 cookies.

The balls of dough should be placed roughly 1.5 inches apart. Bake them in the oven for 14 minutes, until they're just starting to brown on top.

While the cookies are baking, combine the chocolate & coconut oil in a bowl & microwave until melted (30-60 seconds). Stir to combine & set aside.

When the cookies are done, remove them from the oven and place on a cooling rack or the counter (off the baking sheet). Let cool for 10 minutes then drizzle chocolate over each cookie.

Sprinkle bits of flaky salt on the cookies, then let them continue cooling until the chocolate hardens. Serve and enjoy!

Can flourless cookies be frozen?

Yes, they can. Place them in an airtight container & they'll keep in the freezer for several months.
