Zucchini & Mushrooms

Perfect for weeknights!

Learn how to make this quick and easy side dish that goes with just about anything! Using just 6 ingredients, it comes together in less than 20 minutes.

 - It's quick and simple.  - you can easily adjust the seasonings to your liking.  - sautéing the veggies this way helps you avoid the zucchini getting mushy!

WHY MAKE THIS DISH?

– 8 oz sliced mushrooms – 2 small/medium zucchini (between 5/8 and 3/4 lb) – 2 cloves garlic, pressed or minced – 1 tbsp olive oil – 1/2 tsp kosher salt, divided – 1/8 tsp fresh ground black pepper (or more if desired)

INGREDIENTS

Place the oil and garlic in a warmed nonstick pan over medium heat.

Add in the sliced mushroom and half the kosher salt, stirring to combine. Spread in an even layer and cook for 6 minutes without stirring.

Cooking the mushrooms before adding the zucchini to the pan helps ensure that the zucchini won't get mushy!

While the mushrooms are cooking, cut the zucchini into 1/4 inch slices, then cut those slices in half. Set aside.

When the 6 minutes are up, stir the mushrooms. Flip them so the uncooked side faces down and spread in an even layer, cooking 4 more minutes undistrubed.

When the 4 minutes are up, add in the cut zucchini along with the pepper and remaining kosher salt. Stir to combine.

Cook for about 6 minutes, stirring occasionally. Serve immediately.
