GROUND BEEF & BROCCOLI

This Ground Beef and Broccoli stir fry is a great weeknight meal that can be made in 15 minutes. Serve it with white rice, brown rice, or cauliflower rice for an extra boost of veggies.

INGREDIENTS

1 pound ground beef ½ tsp kosher salt ¼ tsp ground black pepper ¼ cup coconut aminos ¼ cup beef broth 1 tbsp orange juice ½ tbsp rice vinegar 1 tsp sesame oil ¼ tsp garlic powder ¼ tsp ground ginger ⅛ tsp chili pepper flakes 9 ounces broccoli florets, roughly the same size

Cook ground beef in a non-stick skillet over medium heat. Add kosher salt & ground black pepper & cook until browned (about 5-7 minutes).

While beef is cooking, add all the other ingredients except for the broccoli into a measuring cup. Stir to combine.

Add the broccoli and sauce to the pan, then cover & cook for 5 minutes. Stir then cook another 3-5 minutes.

Remove from pan and serve with regular rice or cauliflower rice. Enjoy!

Yes, typically you should brown meat before adding veggies. In this recipe, the beef stays in the pan with the broccoli to absorb the sauce.
