GRILLED ZUCCHINI

This Grilled Zucchini recipe is as easy as it gets. Cut up the zucchini, cover it with oil and some salt for seasoning, then get it on the grill. A simple way to enjoy this healthy green veggie.

INGREDIENTS

-5 zucchini (small to medium size) -1 tablespoon oil (avocado or olive work well) -1 teaspoon kosher salt -red pepper flakes (optional)

Slice the bottom & top off each zucchini, then cut eat in half length-wise. Place each half in a large bowl.

Measure out then pour both the oil and kosher salt onto the zucchini.

Use your hands to rub the oil and salt evenly on the zucchini, until well coated.

Preheat your grill to 400F and place the zucchini with the insides facing up. Close the lid & cook for 3 minutes.

Open the lid and flip the zucchini so the insides are on the grill grates. Cook another 2-3 minutes.

Remove the zucchini from the grill & plate them, sprinkling with red pepper flakes before serving, if desired.

Why does zucchini get soggy?

Zucchini gets soggy when it's overcooked. Pick it up with tongs to see how limp it is - you want it to have a slight bend but not be limp.
