Gluten Free Peach Crisp

This gluten free peach crisp with fresh peaches and blueberries takes two of the best summer fruits and turns them into one delicious dessert!

INGREDIENTS

Preheat oven to 375F. Peel the skin off the fresh peaches with a sharp paring knife.

Cut the peaches into slices with the knife. First make a cut into the peach from top to bottom, then do the same cut about a quarter inch to the right. Then scoop the knife under to cut the piece out.

When selecting peaches, you want ones that are slightly soft to the touch. If they're too soft they're difficult to cut and if they're too firm they won't be sweet enough.

Place the peaches in single layer in a large baking dish, then wash and dry the blueberries and spread them on top of the peaches.

Combine the remaining ingredients for the topping into a large bowl, measuring the right amount with measuring cups and spoons, and mix with a wooden spoon until well combined.

Pour the topping into the dish and spread evenly over the fruit with a wooden spoon. Place the dish in the oven and cook for 40 minutes, until the topping is golden brown and the filling is bubbling.

Remove from the oven and serve on plates or in bowls with a scoop of vanilla ice cream.
