CHICKEN ENCHILADAS

WITH ROTISSERIE CHICKEN

Ingredients:  - Butter  - Onion  - Kosher Salt  - Diced Green Chiles  - Shredded Chicken  - Gluten Free Tortillas  - Enchilada Sauce  - Shredded Cheese  - Green Onions (optional)

Heat the butter in a pan, then cook the onions and diced chiles, adding in chicken to warm. Separate into sections to evenly distribute into tortillas.

Warm the tortillas in the microwave to make them pliable, then add the chicken filling, enchilada sauce, and cheese to each one.

Roll them up with the crease facing down. Repeat until you run out of room in the dish. Pour remaining enchilada sauce on.

Sprinkle shredded cheese on top and cover with aluminum foil. Bake for 20 minutes at 350F, then uncover & bake another 5-10 minutes. Cool & serve!

ARE CORN TORTILLAS GLUTEN FREE?

Most of them are, but I recommend using almond flour tortillas in this recipe.
