Grab a bag of frozen peas & carrots & a couple eggs to make this easy fried rice recipe. It's simple comfort food that's perfect for a family dinner.

Rinse and drain the rice until the water is clear, then cook it according to the package directions.

Line a baking sheet with aluminum foil and lay the bacon on the sheet in a single layer.

Stick the pan in a cold oven, set the temp for 400F & cook for 20 minutes. Turn the pan & cook for another 10 minutes, until bacon is cooked through. Place on plate with paper towels to cool.

Cook the frozen peas and carrots according to package directions. While they're cooking, cut the bacon into bite-sized pieces.

Crack the eggs in a bowl & whisk them together, adding a tsp of tamari if desired. Cook them in a large pan over medium heat, breaking them into small pieces.

When everything is cooked and cut up, add the rice, veggies, and bacon into the pan. Stir together to combine.

Pour in the tamari and stir again. Taste the fried rice and add more tamari if desired.
