Mashed Potatoes Instant Pot

Smooth, creamy, and totally delicious, these mashed potatoes made in the Instant Pot are a perfect side for your next dinner!

 - It cooks up easily with less than 10 ingredients  - You don't have to watch the stove in case your pot boils over.  - The flavor is delicious, but mild enough for kiddos.

Why make this dish?

-Russet potatoes -Chicken broth -Kosher salt -Garlic powder -Butter or ghee -Milk (whole or coconut for dairy free) -Fresh thyme

INGREDIENTS

Wash and peel the skins off all the potatoes, throwing the skins away.

Cut the peeled potatoes into roughly 1 inch cubes with a sharp knife.

Try to make your potato cubes roughly the same size. The closer they are to the same size, the more evenly they’ll cook.

Place the cubed potatoes into the insert of your Instant Pot and pour in the chicken broth.

Put the lid on the Instant Pot, set the top valve to Sealing, then press the Manual button to cook for 8 minutes on High.

While the potatoes are cooking, melt your butter or ghee and, if using coconut milk, make sure it's blended.

When the timer of the Instant Pot goes off, carefully turn the top valve to Venting to release pressure, then remove the lid & mash the potatoes as best you can.

Add the salt, butter or ghee, thyme leaves, garlic powder, and milk in with the potatoes.

Use a mixer to whip the potatoes until they're smooth, then scoop them into a mixing bowl and serve them topped with a drizzle of butter or ghee & a sprinkle of fresh thyme!
