Wash and peel the skins off all the potatoes, throwing the skins away.

Cut the peeled potatoes into roughly 1 inch cubes with a sharp knife.

Place the cubed potatoes into the insert of your Instant Pot and pour in the chicken broth.

Put the lid on the Instant Pot, set the top valve to Sealing, then press the Manual button to cook for 8 minutes on High.
While the potatoes are cooking, melt your butter or ghee and, if using coconut milk, make sure it's blended.

When the timer of the Instant Pot goes off, carefully turn the top valve to Venting to release pressure, then remove the lid & mash the potatoes as best you can.
Add the salt, butter or ghee, thyme leaves, garlic powder, and milk in with the potatoes.

Use a mixer to whip the potatoes until they're smooth, then scoop them into a mixing bowl and serve them topped with a drizzle of butter or ghee & a sprinkle of fresh thyme!
