Ingredients: 1/3 c dairy free butter 3 large eggs 2 tbsp honey 2/3 c non-dairy milk 1.5 c oat flour 1 c finely ground cornmeal 2 tsp baking powder 1 tsp kosher salt
Melt the butter in a large bowl, then add in the milk, honey, & eggs. Whisk until well combined.

Add in the oat flour, cornmeal, baking powder, & kosher salt.

Stir with a spoon to combine, making sure there are no large clumps.

Spoon the mixture equally into a muffin tin, then bake at 350F for 15-20 minutes.

When the timer goes off, insert a toothpick into a muffin. If it comes out clean, the muffins are done.
