CHICKEN CHILI

GLUTEN & DAIRY FREE

Ingredients:  - Oil  - Diced Onion  - Garlic  - Mild Green Chiles  - Fire Roasted Tomatoes  - Canned Black Beans  - Low Sodium Broth  - Frozen Corn  - Spices (chili powder, kosher salt, cumin, smoked paprika)  - Shredded Chicken

Warm oil in a large pot and cook the diced onion, adding the garlic after 5 minutes. 

Add in the spices and stir, then add in the beans, chiles, tomatoes, broth, and corn. Bring to a boil then simmer on low.

Pour in the shredded chicken and cook on low until warmed through.

Taste the chili and add more salt if desired, then serve in a bowl with your favorite toppings!

SHOULD YOU DRAIN BLACK BEANS FOR CHILI?

Yes, you absolutely should rinse & drain the black beans. Otherwise the chili will be too salty.
