BEEF STEW

INSTANT POT

This Instant Pot Beef Stew recipe is super easy & completely delicious. Made with mushrooms, potatoes, carrots, peas, and steak,  it’s a simple dinner for a weeknight.

INGREDIENTS

– 1 lb beef for stir fry - not stew meat – 1/2 tbsp cooking oil – 1.25 tsp kosher salt, divided – 1/2 tsp ground black pepper, divided – 1/2 large yellow onion – 3/4 pounds potatoes – 3/4 pounds carrots – 8 ounces whole baby bella mushrooms – 2.5 cups beef broth – 1/2 tsp garlic powder – 1 bay leaf – 1 tbsp coconut aminos – 1/2 tbsp fish sauce – 1/2 frozen peas

Cut the beef into small, 1-inch pieces. Sprinkle 1 tsp of kosher salt and 1/2 tsp of pepper over it.

Press the Saute button on the Instant Pot & pour 1/2 tbsp of oil in. Once hot, add in the beef and brown in the pot for 4 minutes, stirring halfway through.

While the beef is browning, cut up the vegetables. Quarter the mushrooms, diced the onion, and cut the potatoes & carrots into 1/2 inch pieces.

When the beef has been seared, remove it from the Instant Pot. Add in diced onion and 1/4 tsp kosher salt then cook for 3-4 minutes.

Add in the other ingredients except for the frozen peas. Put the lid on, set the valve to Sealing, then cook on high for 5 minutes.

When the timer goes off, turn the top knob to Venting and let the steam release.

Remove the bay leaf & pour in the peas. Stir them in and put the lid back on, but don't turn the Instant Pot on. Let sit for 4 minutes.

Remove the lid and stir the stew. Taste it and add more kosher salt if necessary, then serve!

Should I brown stew meat first?

It's not necessary, but it does help. Browning the meat for the stew will give it a better flavor once it's fully cooked.
