BACON FRIED RICE

This bacon fried rice is comfort food at its finest. Enjoy some for dinner or put a fried egg on top and eat it for breakfast!

Ingredients: 2 cups white rice 1 lb bacon 10 oz frozen peas & carrots 3 eggs 2 tbsp tamari sauce 1 tbsp cooking fat of choice

Cook the rice according to directions, then line a sheet pan with aluminum foil and lay the bacon on it.

Put the bacon in a cold oven and set the temp to 400F. Cook for 30-40 minutes.

When done, line a plate with paper towels and set cooked bacon on it in layers to drain the fat off.

Cook the peas and carrots according to package directions, either in a pot or in the microwave.

While the veggies are cooking, slice the bacon into bite-sized pieces.

Heat a pan with the oil and scramble the eggs, then add in everything else and stir to combine.

Taste and add more tamari if needed, then serve!
