CHICKEN SALAD

Pears & hazelnuts give a fall flair to the classic chicken salad recipe. This easy meal is great over greens or in a sandwich!

Ingredients: 2 cooked chicken breasts 10-12 oz mayo 2-3 green onions Herbs (fresh dill & tarragon) 1/2 tsp kosher salt 1/4 tsp ground pepper 1 large pear 3/4 cup hazelnuts Mixed greens for serving

Use a knife and cutting board to roughly chop the hazelnuts & set aside.

Use the same knife & cutting board to dice the pear, removing the core and seeds. Set aside.

Chop the green onions and set aside in a small bowl.

Remove the fronds & leaves from the dill & tarragon and finely chop. Add to a bowl with the mayo.

Add the salt & pepper to the mayo and stir to combine. Set aside.

Shred the chicken if not already shredded, then place in a large bowl.

Combine all the ingredients in the bowl with the shredded chicken & stir to combine.

Place some greens on a plate & scoop some of the chicken salad on it, then serve!

HOW LONG DOES HOMEMADE CHICKEN SALAD LAST?

Chicken salad will last 3-5 days in the fridge when stored in an airtight container.
