Your family is going to love this healthy marinade for chicken – it tastes very similar to teriyaki chicken but has less ingredients and is much easier to make. And it’s gluten free, paleo, and Whole30 compatible too.
Chicken is one of my favorite proteins to grill. I’ve done pineapple grilled chicken thighs, Greek grilled chicken breast, and even a whole brined smoked chicken! Plus grilled chicken is great on a Cobb salad.
But for delicious chicken without any fuss, this chicken marinade without soy sauce is where it’s at.
The 4 ingredients you need

- Oil – you want a high heat oil here. I use avocado oil, but there are many other options. Check out this table of smoke points for oils to see what you could use.
- Coconut aminos – the aminos add both a bit of sweetness and savoriness to the marinade. Don’t replace this with soy sauce or Worcestershire sauce as neither has quite the same flavor profile – you need coconut aminos.
- Dijon mustard – the mustard is going to give the marinade a slight tang and balance out the sweetness of the coconut aminos.
- Kosher salt – I use Diamond Crystal kosher salt in this recipe. If you have a different brand of kosher salt, use this salt conversion chart from Epicurious to determine how much salt to use.
How to make a coconut aminos chicken marinade
This marinade is so easy. SO easy.
All you need to do is measure out all four ingredients into a container, then either stir it with a whisk or put a lid on the container and give it a good shake to make sure the ingredients are fully combined.
